Fresh Chalk Stream Trout Fillets (2 x 140g-170g)

All our fresh fillets of trout high in Omega 3 are from ChalkStream in Romsey who work with small high welfare trout farms based on the idyllic Hampshire rivers Test and Ithchen. The local trout farms that run along the rivers and supply ChalkStream are built on the sites of old water mills where the races provide a huge volume of pure chalk stream water that allow the fish to grow in a constant current, mirroring their natural river environment. These trout are slow-grown for 2 years in custom designed, gravel bottomed tanks and raceways that create the cleanest possible growing conditions, producing trout that are fit and lean with a unique, clean taste. We like to cook ours fried in butter, creme fraiche, oyster mushrooms and tarragon, with a splash of white wine and a little crushed or baked garlic.
